Kabocha (or "pumpkin") is a versatile and nutrient dense squash. Kabocha is high in the antioxidants beta carotene and vitamin C, and it is a good source of iron, fiber, vitamins and minerals.
Kabocha can be sliced roasted, pureed into a soup, or stewed with herbs and seasonings.
